El allioli
El allioli (del catalán-valenciano all i oli, 'ajo y aceite'),1 ajolio (en Aragón), ajoaceite (en la zona castellanoparlante de la Comunidad Valenciana, Murcia o Albacete), ajiaceite o ajaceite es una salsa típica de la gastronomía mediterránea (valenciana, catalana, balear, murciana, granadina...) formada por la emulsión de aceite de oliva y ajo.2
Suele emplearse como condimento en algunos de los platos, en especial de preparaciones a base de pescado o marisco. a veces como una salsa servida por separado. Forma parte de las salsas a base de ajo. Es frecuente en regiones e islas del arco mediterráneo entre España, Francia e Italia, que va desde Granada a Calabria, pasando por Cartagena (Murcia), Alicante (Comunidad Valenciana, Cataluña),3 Provenza (donde se denomina Le Grand Aïoli) o Liguria. En zonas de África se elabora una preparación muy similar denominada Toum. Entre estos platos podríamos citar el universal arroz a banda y su caldero que lo acompaña.

Horchata

INGREDIENTS (Nutrition)
1 cup long grain rice, rinsed
2 quarts water
1 cinnamon stick, broken into pieces
1 teaspoon vanilla (optional)
1/2 cup white sugar
DIRECTIONS
In a large saucepan, combine rice, water and cinnamon stick. Set aside for 3 hours.
After 3 hours, bring to a boil, reduce heat, and simmer for 30 minutes. Allow to cool.
Puree rice mixture in a blender until smooth. Strain through cheesecloth or a fine sieve. Flavor with vanilla and sugar to taste. Chill, and serve over ice.

Amaranth with Spinach Tomato Mushroom Sauce

1 cup amaranth seed
2-1/2 cups water
1 Tablespoon olive oil
1 bunch spinach (or young amaranth leaves if available)
2 ripe tomatoes, skinned and coarsely chopped
1/2 pound mushrooms, sliced
1-1/2 teaspoons basil
1-1/2 teaspoons oregano
1 clove of garlic minced
1 Tablespoon onion, minced
Sea salt and pepper to taste (or use a salt substitute)
Add amaranth to boiling water, bring back to boil, reduce heat, cover and simmer for 18-20 minutes.
While amaranth is cooking, stem and wash spinach, then simmer until tender. Dip tomatoes into boiling water to loosen skin, then peel and chop. Heat oil in a skillet over medium heat and add garlic an onion. Sauté approximately 2 minutes. Add tomato, mushrooms, basil, oregano, salt, pepper and 1 Tablespoon of water. Drain and chop spinach and add to tomato mixture. Cook an addition 10 – 15 minutes, stirring occasionally. Lightly mash tomato as it is cooking.
Stir the sauce into the amaranth or spoon it on top.

Sea salt or soy sauce to taste
Hot sauce to taste

Conejo a la Canaria

1,1/4 kilo de conejo troceado
5 dientes de ajo
Aceite de oliva
Guindilla
1 cucharada de pimentón dulce
1/2 taza de vino blanco seco
1/4 taza de vinagre de vino
Tomillo
Orégano
Sal
Preparación
Majar los ajos con sal, pimentón y guindilla; añadir vinagre, vino y 2 cucharadas de aceite. Lavar los trozos de conejo y secarlos. Adobar con el majado, orégano y tomillo de 3 a 5 horas; escurrir.
Precalentar la bandeja de dorar 7 minutos a máxima potencia. Agregar el conejo y el resto del aceite y cocinar 4 minutos, dando varias vueltas a la carne para que se dore. Incorporar el adobo y cocinar 12-15 minutos. Remover una vez a lo largo del proceso.
